- Grapes sourced from new plantings (2019 onwards)
- Whole bunch pressed using an old Vaslin basket press
- Oxidized juice with no added sulfur dioxide until after fermentation
- Spontaneous fermentation on lees with no stirring
- Aged for 11 months in older barrels (5% new) with separate vinification for 3 vineyards
- Blended after aging in stainless steel for 1 month
- Bottled and released after 9 months
