Artisanal mezcal is made from 100% Espadín, hand-harvested from the plains of the Oaxaca Valley. The agave is roasted in a stone-lined, wood-fired pit, then milled using a horse-drawn millstone. It undergoes natural fermentation in 800-liter pine vats with native yeast and is double distilled in copper stills.
